Lately the yolks don't appeal to me any more and I want only the whites and am so happy with those whites in cartons, the idea of which seemed icky til I tried it--they're great. I used to order a baked eggs with spinach and 4 cheeses at an Italian place in NYC (ricotta, parm, mozz 1 other). These look beautiful tho I really don't eat pepperoni. Once my mother told me that as a kid her widowed mother worked and so my mother decided to surprise her with dinner. A cookbook gave her the idea to hollow out some tomatoes and fill with cracked eggs and bake. She was so proud to say her mom said it was the best dinner she ever ate. She was like 85 when she told me this story so it stuck with her forever. So this one isn't for me...but it's beautifully photographed as usual and I would love to have kale, chorizo & onion!!
